Alright. My name is Amy Knapp. Simple enough. Some people call me Napkin, because I literally am a "Knapp kin." But I like being called Amy.
I was born in San Diego, but I moved to Colorado when I was about eighteen months. I've lived in a suburb area called Highlands Ranch most of my life, a little south of Denver. I have a wonderful set of parents; my dad is an electrical engineer at the United Launch Alliance and my mom teaches third grade (bless her soul). I also have a sister, Sandra. She'll be a Junior at San Diego Christian College this coming fall. My brother, Tyler, is fifteen. He'll be a sophomore in high school. Oh, and he's aaadorable. Holy cow.
I actually just graduated high school in May. Ha. My graduation was at Red Rocks, and it was thirty-five degrees and pouring rain the whole time. I was literally going into hypothermia. It was fun. Anyway, after Cambodia, I will spend the spring of 2012 working. Then, I'll go up to Colorado State University and major in equine science.
I am happy to say that I have two jobs. The first is at Noodles and Company. I hope some of you know what Noodles is! It's a restaurant that serves pasta, soup, salads, and sandwiches. And it's delicious. Mmmm. Even though I work in the food business, I love it. My coworkers are some of my best friends, and they make the stress of working in a restaurant worth every minute. Hey, want to know something exciting?? There was a fire in the kitchen three days ago! The restaurant had to close down, which was fine with me because I was scheduled to work from 10 am to 11 pm that day. On another note, I also teach horseback riding lessons! I mostly do private Western style lessons. I used to teach a class called Kiddie Corral for 5-7 year olds. Dang, those kids wore me out. So now I stick to private lessons. :)
Yeah...I'm a horse person. I've been riding Western for over six years now, and I bought my first horse in March of 2010. I love that mare to death. She's the reason I'm working so much. I'm the only horse person in my family, so I pay for her. I hope to compete in barrel racing someday (barell racing is a rodeo event). I also am a freak for long distance running. Before I started working like a dog, I ran about five miles a day, because I'm weird and I LOVE it. Now I try to get in a good run a few times a week.
I have an obsession with my beautiful home state of Colorado, and love hiking, biking, fishing, etc. Also, I am a dork for country music. Dierks Bentley, Tim McGraw, Kenny Chesney, Josh Turner, Brad Paisley...yessss.
I have been on two mission trips before. The first was to Chinle, Arizona when I was....twelve. I think. The second was just last summer. I went to the Dominican Republic with my youth group. Both trips were incredible and life-changing!
Honestly, I can't believe I'm going to Cambodia. I don't think it'll sink in until we get there...heh. But I hope and pray that God will prepare my heart for this trip, and that He will bend me and mold me while I'm there. I also hope to be humbled...to spend my time there pouring my heart into what we will be doing.
